Clean Egg White Casserole

Breakfast for the week! Last week's breakfast quiche was a little too "busy" with flavors and textures for me. This one was not quite "busy" enough. BF loved it and ate it for breakfast AND lunch so it may just be me.

Prep Time: 15 minutes
Cook Time: 30 minutes
Servings: A week's worth of breakfast for 2

Ingredients:

  • 1 red pepper, diced $.88
  • 1/2 large onion, diced $.50
  • 2 cloves of garlic, minced
  • 2 handfulls of spinach
  • 1/2 pound lean ground turkey ($3.00)
  • 3 eggs
  • 4 egg whites
  • 1 teaspoon dry mustard

Preheat the oven to 400 degrees. Season the turkey with sea salt and pepper and cook on the stove. While it's cooking beat the eggs and egg whites together in a medium sized bowl. In a larger bowl combine the red pepper, onion, garlic and stir together. Add the beaten eggs and dry mustard and mix together. Spray an oven-safe pan (I used a 9x13 pan and the casserole came out really thin, next time I'm going to try 9x9) with cooking spray and pour the mixture into the pan. Cook for 30-40 minutes, or until the egg is completely cooked.

Slice up, microwave in the mornings and enjoy!
