Garlicy Turkey Burgers with Bruschetta

Tuesday, August 13, 2013

I was really hangry by the time these were done cooking so I didn't take a picture, but the pictures above get the idea across. A few weeks ago we went out to eat with friends and my BF actually ordered "a bowl of bruschetta" and ate it with a spoon. As I watched him shovel bruschetta into his mouth while everyone else daintily spooned a tiny bit onto their bread,  I wondered how does he behave when I'm not here? That's a sidenote, and thankfully we don't eat out much anymore with this clean eating lifestyle change. After listening to him complain about not being able to eat anything he likes I decided to make a clean bruschetta that he can eat with an ice cream scooper in the privacy of our own home. But what do you put bruschetta on when you can't put it on bread you ask? You put it on MEAT. It turned out delllicciouussssss and completely clean (minus a teeny tiny bit of olive oil in the bruschetta to make it soupyish)! The prices on my recipes are the prices at my favorite grocery store Snider's Superfoods in Silver Spring. I've done tons of comparing across Snider's, Giant, Harris Teeter, Yes! Organic Market (yeah right), and Snider's always comes out the least expensive. Even when you factor in the cost of gas to drive out to BFE aka Silver Spring.

For the burgers:
Prep Time: 5 mins
Cook Time: 20 mins
Servings: 5 medium sized patties

Ingredients
  • 1 lb 98% lean ground turkey ($6)
  • 2 cloves garlic- pressed ($.30)
  • 2 eggs ($.21)
  • 1/4 onion- chopped ($.75)
  • 1/8 Cup chopped red pepper ($.50)
  • Pepper
Mix all $7 of this stuff in a bowl. Form 6 round flattish patties. Spray a pan with cooking spray and cook over medium heat. I'm really impatient especially when I'm hangry so I remember it taking about 45 minutes to cook but in reality it was probably 15. Just keep an eye on your patties.

For the bruschetta:
Prep Time: 10 mins
Cook Time: 0
Servings: 5
  • 1/4 Cup diced onion ($.50)
  • tiny bit of olive oil
  • 1 Tbsp Balsamic Vinegar (no clue how much this cost because I bought it as Costco forever ago)
  • 3 medium tomatoes- diced ($1.50)
  • 3 cloves garlic- minced (we love garlic ok?)
  • 2 Tbsp Basil leaves (I used dried basil leaves from Snider's. The whole jar of seasoning was $1.28! There is not much I hate more than spending $5 for tiny jars of seasonings. Thank you, Snider's)
  • Mix it all together. Put it on top of the burgers. Or eat it with a shovel if you are my BF.

Eat it all naked. And save the leftovers for lunch tomorrow!

And by naked I mean bunless.
