Squasta and {Turkey} Meat Sauce

As mentioned before, grocery shopping is quite a sport for me. I wanted to try this spaghetti-squash-pasta experiment I've been seeing all over Pinterest, but when I got to the grocery store I couldn't find this mythical "spaghetti squash". In a frazzle I grabbed 3 small green squashes and bolted. This turned out to be the best thing that could have happened. The texture of the cooked squash made into "squasta" was perfect, it was just like pasta al dente!! I die. {click "read the whole post" for the recipe}

Ingredients

  • 1 lb lean ground turkey ($3.50)
  • 3 small green squashes (or 2 mediums) ($3.00)
  • 1 jar no-sugar added natural tomato sauce ($2.50)
  • 1/2 white onion, diced ($.50)
  • 1 green pepper, diced ($1.00)
  • 2 cloves garlic, minced
  • 1 Tablespoon Italian Seasoning
  • 1 teaspoon garlic salt
  • 1 Tablespoon dried parsley
  • 1 Tablespoon cumin
  • 1 teaspoon red pepper flakes
  • 1 teaspoon olive oil
  • Parmesan Cheese to taste


Season the turkey with cumin and garlic salt, cook in a frying pan over medium heat. While the turkey is cooking, cut the ends off your squashes. Slice the squashes long-ways on a mandolin on the thinnest setting (if your's has settings). Once you have your slices, cut the slices long ways into thin noodle-like pieces (pictures below). Toss your "squasta" in the olive oil and cook over medium heat until al-dente (or just soft).

In another pan, saute the onions, green pepper and garlic about 4 minutes or until the onions are translucent. Add these to the pan of cooked turkey. Add the tomato sauce and seasonings to the meat mixture. Heat the meat mixture about 10 minutes or until the meat sauce is evenly heated.

Top the squasta with meat sauce and enjoy!

Also, I thought I was really creative coming up with "squasta". This is apparently incredibly difficult to say, and the BF keeps calling it the "Skittles with Meat Sauce". Why. Just why.
