Paleo Snack + Weekend Recap (late is better than never right?)



Soo it's been QUITE a week - Thursday Harrison and I flew to Memphis for my brother's SURPRISE wedding (which I've known about since October and have never kept such a big secret for so long and it was TORTURE) which was great and will get a photo dump further down.

For now though, let's talk paleo snacking. When I switched over to eating clean about a year ago, the snacks were the hardest part. Not being able to just grab a bag of chips or fruit snacks suuucked (that's right I'm 27 and still crave Welch's Fruit snacks- DA BOMB). I've kind of figured it out since (you can read about my snacking adventures here), and now I've found a new favorite refreshing snack. I prep a bunch of these little turkey rolls on Sundays and grab them on my way out the door.

Ingredients:

  • 2 cucumbers, sliced thin longways (I always use my $17 NoPro Mandolin for this)
  • 1 tomato, sliced thin
  • 1/2 lb deli turkey meat
  • salt, pepper, garlic powder to taste
  • 1 teaspoon dijon mustard
Place the tomatoes, turkey, seasoning, and a dab of mustard on top of the cucumber slice and roll it up. That's it. Make a lot for the week and store in a tupperware so you can grab and go all week!

And now for the surprise wedding! My brother and his fiance are not into doing things the traditional way, so they invited everyone to their new house for an "engagement party". When everyone showed up one of the friends gathered everyone for what appeared to be a toast- talked about how they are spontaneous and break the mold and said "A good example is today. While you all think you're here for an engagement party, it's actually their wedding!" Everyone cheered. I cried. It was beautiful. Here's my photo dump:

Thursday night we went out to see some live blues on Beale Street (if you ever make it to Memphis, Beale Street is a lot of fun!)

Then went to the "Engagement Party" where they found a good use for the bathtub they ripped out of the old house:

Paleo Crockpot Creamy Chicken Soup + Weekend Recap

Mondaaaayy. Is it just me or are December Monday the WORST. The weekends are so jam packed and Monday comes along and ruins everything.


I tried out this crockpot soup a few weeks ago when I had friends coming over for dinner and zero time to prepare a dinner. It was super easy, super delicious, and different! My recipe is adapted from Caramel Potatoes. I was suuuper skeptical about using coconut milk, but it added a creaminess and the coconut taste really complemented the rest of the soup.

Prep Time: 20 mins
Cook Time: 8 hours (in the crockpot)
Servings: 6-8

Ingredients:

  • 3 lbs breasts, thawed ($12)
  • 1 cup chopped celery ($1.00)
  • 1 cup shaved carrots ($.50)
  • 1 onion, diced ($.80)
  • 1 can full fat coconut milk ($1.50)
  • 1 14 oz can of fire roasted diced tomatoes ($1.00)
  • 2 cups chicken broth ($2.00)
  • 2 cloves garlic, minced
  • 2 Tablespoons Italian seasoning

Throw everything into the crockpot and cook over medium for 6-8 hours. After 6 hours you should be able to shred the chicken (I waited until 8.5 because that's when I got home from work) using 2 forks. Pull out the chicken, shred it, and put it back into the crockpot. Let it cook another 30 minutes with the shredded chicken. Whenever I crockpot meals I let them sit out for 30 mins to let everything set. Is that a thing or did I make that up?

This weekend was packed and SO fun. Friday we celebrated a friend's birthday with karaoke which I have no quality pictures from. Blessings in disguise right there.

Saturday I bottomless-mimosa-brunched at Vinoteca for another friend's birthday. The food. was. perfect. My friend got the steak and eggs and that was the first time I've ever thought steak and eggs looks appetizing.


I can't hang after day drinking anymore so I went home, took a nap, woke up, watched Love Actually. No complaints here.

Sunday morning I got up to run the Jingle All the Way 5k. There were so many creative costumes and great views, we even ran by THE nation's Christmas tree!


Andi, Ziggy and I went on a playdate with the neighbor and she took the coolest videos with her new iphone, I've watched this at least 10 times today:


Then we went for a walk and found a boundary stone right in our neighborhood! Apparently these used to surround the city, this one was hundreds of years old. Crazy! I DO live 2 blocks from the DC/Maryland line, so I don't know why I was so surprised. It's funny because on one side of this street, the license plates are DC and on the other side they are Maryland. What a pain.

Taking Care of Business- Shrimp Scampi(ish) + Giveaway winner

Um. Can we skip this? Harrison and I dominated the 1st 3 weeks, then Thanksgiving week happened and that was that. By the end of week 3 I was down 8 lbs (whoa!) and he was down 10. We haven't had the strength to weigh in this week. Liiiike:

I got this lifetime supply of shrimp at Costco for $17 so we are gettin fishy around here. This is cleaned up version of shrimp scampi- confession: I despise creamy sauces so I actually have never tried shrimp scampi but this LOOKS like the dish I've seen in restaurants (and it smells like it too).

Prep Time: 5 mins
Cook Time: 45 mins
Servings: 2

Ingredients:

  • Cashew Sauce
  • Frozen shrimp (I got a bag of raw, tail off, un-cooked shrimps and used about 2/3 of the bag for this recipe. We only used half the spaghetti squash and half the sauce so you could probably cook the whole bag and have this meal for 4)
  • 1/2 spaghetti squash
  • 2 tomatoes, diced
  • 1 Tablespoon coconut oil
Cook your spaghetti squash- I tried out D's method  this time and actually really liked how it came out!

When the spaghetti squash has about 10 minutes left in the oven, put your shrimp in a collander and run some cold water over it- JUST until some of the ice crystals have come off. 

Heat one tablespoon of coconut oil over medium heat, then add the sprimps and cook for 5-7 minutes. These puppies don't take much to get cooked- even if they're frozen!

Scoop out your "spaghetti" and top with shrimps, tomatoes, and cashew sauce. Enjoy!

Bomb Breakfast Casserole + Paleo Updates

A few weeks ago I talked about how Harrison and I are going paleo for awhile to shake things up a little before the wedding. We've made some great progress! In 2 weeks he has lost 6 lbs and I've lost 4, I've lost an inch around my waist and an inch around my hips, Harrison has lost 2 inches around his belly (whaa) and an inch around his neck. Isn't that nuts?

Doing this with Harrison has been hilarious/weird. As someone who spent years in Weight Watchers Anonymous, I've been aware and educated about my food for a solid 8 years. Knowing what I'm eating and understanding the nutrition in it and how the nutrition affects the body is the norm for me. Not so much for Harrison. For example: The day he ate a freezer bag of almonds and almost sh*t his pants and couldn't figure out what upset his stomach. We had a little talk about fiber, and the fact that I eat 10 almonds a day for a few reasons...


So now that you have that visual in your mind, how about some tasty breakfast casserole:

Servings: 8
Prep Time: 20 mins
Cook Time: 50 mins

Ingredients:

For the crust/bottom:

  • 2 sweet potatoes, mashed ($2)
  • 1 Cup Almond Meal (found a great deal at Wal-Mart)
  • 2 Tablespoons ground flaxseed
  • 1 teaspoon baking soda
For the rest of it:
  • 10 eggs, beaten ($1.50)
  • 1 Tablespoon garlic powder
  • 1 Tablespoon sea salt + black pepper
  • 2 Tomatoes, sliced ($2)
  • 1/2 onion, diced ($.50)
  • 1/2 lb ground turkey, cooked (I used leftover cooked turkey that didn't make it into my meatballs) ($2.50)

Preheat the oven to 425 degrees. Combine all the crust ingredients and knead well with your hands (it's icky). Smash it into a non-stick 9x9 baking dish (smoosh it all around until the entire bottom of the dish is covered) and cook for 25 minutes, or until the crust is no longer dough-y in the middle.

While the crust is cooking, combine the seasonings, eggs, onion, and ground turkey and mix it all well.

Once the crust is cooked, pour the egg concoction on top of the crust. Top the egg concoction with the tomatoes and cook for 25-35 mins (until the egg is cooked all the way through). I kept mine covered in the fridge for a week, eating a piece each day.

And breakfasts like this are what make me think I could live solely on paleo breakfast.

Frozen Veggies - Yay or Nay? + 20 minute PALEO STIR FRY!

I’ve always been curious about frozen fruit/veggies vs. fresh fruit/veggies—especially since the frozen is generally less expensive than fresh. Now that we’re on this paleo kick, fruits and veggies are a main staple and the cost is adding up. So when the opportunity to team up with AFFI (American Frozen Food Institute) came up I was super pumped to learn more.
First off, I learned about this study:
The University of California, Davis, in partnership with the Frozen Food Foundation, conducted a study that revealed that frozen fruits and vegetables are most often (or generally) nutritionally equal to – and in some cases better than – their fresh counterparts. For the study each fruit and vegetable was analyzed under the following conditions: frozen (analyzed within 24 hours of harvest and after 10 and 90 days of storage in a freezer) and fresh-stored (analyzed within 24 hours of harvest and after three and 10 days of storage in a refrigerator). The study analyzed vitamins B2 (riboflavin), C and E, and B-carotene (a precursor to vitamin A); the minerals calcium, magnesium, zinc, copper and iron; dietary fiber; and total phenolics (health-promoting plant compounds).*
Just as much nutrients? Less expensive? Count me in! It seems that freezing fruits and veggies is nature’s “pause button” and is a convenient way to get out of season produce as well as cut costs.  Not to mention that it also cuts out a lot of the meal prep work as they come pre-sliced (see recipe below).
Some facts that I learned:
  • Nearly 80% of Americans fail to consume the recommended amounts of fruit and 90% fail to meet dietary recommendations for vegetables (check out this calculator to see if you get enough!)
  • Fruits and veggies are major contributors of essential nutrients in our diets, so consuming fruits and veggies is associated with reduced risk of many chronic diseases (see Washington Post’s article on 41 powerhouse veggies associated with preventing chronic disease
  • Given the increase in the rates of chronic diseases among ALL age groups, packing tons of fruits and veggies into our diet is more important than ever!
  • Even though it’s fruits and veggies, it’s still important to check the ingredients! Anything that comes “in sauce” is a no-go for clean/paleo, and check for added sugar or syrup. There are still a zillion options.
I used some frozen veggies to make this bomb stir fry in under 20 minutes. Yeah.



Ingredients:
  • 1 bag frozen cauliflower ($2)
  • 1 bag frozen stir fry veggies (I used the one pictured below) ($2)
  • 1 lb chicken breast, cubed ($4)
  • 1 TBS Organic Tamari Soy Sauce
  • Sea salt
  • Black pepper
  • 2 TBS olive oil
Season the chicken with salt and pepper and cook over medium heat until cooked all the way through.
Run warm water over the cauliflower until the cauliflower is just soft enough to chop up. Chop it into tiny pieces. Put the pieces in a frying pan with 1 teaspoon olive oil and cook over medium heat, stirring occasionally, until the “rice” is browned.



Pour the bag of frozen veggies (still frozen! Not thawed!)  into the pan with the chicken. Add soy sauce. Stir together and cook until the vegetables are cooked all the way through.



Scoop some rice on the plate, top with chicken and veggie stir fry, enjoy!

I also make my cauliflower mashed “potatoes” frozen cauli, as well as the cauliflower pizza crust.

Things are a changin

Happy Monday! Hope everyone had a great Halloween- our's was a blast, and after all the ado last week over our dogs' anxiety we had TWO trick-or-treaters. Kind of a relief but kind of sad!

You may have noticed (or not noticed) that there have been waaay less recipes on here. This is because I have been soooo bored with clean eating. Boredom = distraction = lots of cheating. Then a doctor's appointment during this bored period in which I was weighed and have gained 15 lbs since this time last year = time for a change. So in this house, we're going paleo! Harrison and I both want to be healthy and on track for the wedding and we both like a good challenge so here we go!

 First thing's first- what IS paleo? Thanks to Pinterest I found a handy infographic from e-meals to explain:

I also got this scale on Amazon (gasp! my first scale ever!) and we're both going to weigh in every week. I have really mixed feelings about weigh ins, but my doctor's appointment made me realize that things had gotten further out of hand than I realized and I need a littttlleee more accountability.

Clean Eating Inspiration

I have run out of creativity with clean eating. I can't come up with any new ideas, and the thought of more turkey/quinoa/chicken/beans is just not appealing right now. Thankfully it's 2014 and the interwebs are full of inspiration and recipes to keep me going, here are a few of my favs:

Bloggers:


Whole Foods New Body. Ashley is a busy mom and her recipes involve simple, clean ingredients that you can find at any grocery store. My favorite feature of her's is What I Ate Wednesdays where she posts everything she eats with either a description or a link to the simple recipes.




Fit Men Cook: Harrison actually introduced me to this guy because he posts clean recipes all over Instagram, he's buff, and he makes it seem  like clean eating is a cool thing that buff men do, not just a girly fad diet (which is why Harrison was so anti-clean eating at first). Again, simple ingredients and quick recipes.



The Iron You: This guy has a lot of creative and funky recipes. Not always the simplest ingredients but I get creative and substitute ingredients when I don't feel like running to Whole Foods.



Popular Paleo: This girl has tonssss of awesome recipes and they're all nicely categorized on her site. Most paleo recipes are clean so I just cook whatever she says is good haha!

Instagram Accounts: Instagram is also a great way to get recipes. These people post pix with their recipes and they're usually pretty simple recipes (simple enough to fit into an Instagram caption at least).

Clean Eating (ish) BBT Pasta


So I'm not quite sure what the deal with pasta is. Is it clean? Is it not? Some people say whole wheat pasta is fine, some people only eat rice noodles, some people use gluten-free. You know what I did? Bought the cheapest out of those 3 options- which happened to be the gluten free version. I recognized all the ingredients so I figured what the hey, why not give it a shot? 

Also I know bacon isn't necessarily clean but it's paleo right? I try to stick to 80/20 (clean/not clean) so it fit into my week perfectly.

Ok and can we just talk about something? I've been cooking clean for almost a year now. Which means Harrison has only eaten clean dinners for almost a year. There have been maybe 3 times that he (ok we) hated the dish- 3 out of probably 300 is a pretty good average - yet every single time he is super skeptical and all like "ok I mean I'll try this to be nice" and 5 minutes later this man has eaten 5 servings. This was one of those meals.

The Sauce (adapted from PPK)
  • 1 cup cashews, soaked in water for at least 2 hours
  • 1 cup natural chicken broth
  • 3 tablespoons nutritional yeast flakes (ordered mine on Amazon!)
  • Fresh lemon juice of one lemon
  • 2 teaspoons dijon mustard
  • 2 teaspoons onion powder
  • Salt and pepper to taste
The Pasta:
  • 1/2 pack of Pasta Noodles (whatever you feel is best!), cooked
  • 3 large tomatoes, diced
  • 4 strips turkey bacon, cooked
  • 1/4 cup basil leaves, chopped
  • salt
  • pepper
  • garlic powder
Combine all the ingredients for the sauce in a blender and blend. 

Toss all the pasta ingredients together.

En.freaking.joy.

I don't know what about this was so good, maybe it was that I haven't had pasta in almost a year, but it was amazing.

Oh and wedding update: every time Harrison and I set aside time to send out our save the dates we get drunk and get nothing done. Which is fine. But really, we have opposite work schedules and the amount of times we have been to happy hour together in the last 3 years I can count on one hand, yet we have hit one hand worth of happy hours in the last two weeks. But hey, everyone tells us to enjoy our time as an engaged couple so I guess we are just taking their advice to heart? Tonight we went to a new place around the block from my work and Harrison got a fun-sized drink that I couldn't stop laughing about:


Tonight we're going to a wedding food tasting at Main Event Catering, can't wait!
