So here's my pokey stick substitution:
Transfer the faux-dough to a baking sheet that is coated with coconut oil or cooking spray. Flatten it out and sprinkle with the rosemary. Throw it in the oven for about 40 minutes or until the "bread"sticks are crispy (including the middle).

Prep Time: 15 minutes
Cook Time: 45 minutes

Ingredients:
- 1/2 head of cauliflower, grated ($2.00)
- 1 cup shredded mozzarella ($1.50)
- 2 cloves garlic, minced
- 1 egg, lightly beaten ($.25)
- 1 teaspoon rosemary
- 1 tablespoon Italian seasonings

Ingredients:
- 2 cups unsweetened, natural tomato sauce
- 2 cloves garlic, minced
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tablespoon parsley
Preheat oven to 425 degrees. Put the grated cauliflower on to a papertowel, then put another paper towel on top of it and squeeeeze
until all the water comes out. I went through SIX paper towels trying
to get all the water out! If you don't do this your "bread"sticks will
be soggy-woof.
Once you have your cauliflower dried out, stir together the grated cauliflower, mozzarella, garlic, egg and Italian seasonings in a medium bowl. Mix it really well until it's a doughy consistency.

While your "bread"sticks are cooking, heat your minced garlic in a baking pan over medium heat. After about 5 minutes add the tomato sauce, powders and seasonings and stir together. Cook over medium for 10 minutes, stirring occasionally.
Slice up your "bread"sticks and serve with sauce!
