Paleo Snack + Weekend Recap (late is better than never right?)

Wednesday, December 17, 2014

Soo it's been QUITE a week - Thursday Harrison and I flew to Memphis for my brother's SURPRISE wedding (which I've known about since October and have never kept such a big secret for so long and it was TORTURE) which was great and will get a photo dump further down.

For now though, let's talk paleo snacking. When I switched over to eating clean about a year ago, the snacks were the hardest part. Not being able to just grab a bag of chips or fruit snacks suuucked (that's right I'm 27 and still crave Welch's Fruit snacks- DA BOMB). I've kind of figured it out since (you can read about my snacking adventures here), and now I've found a new favorite refreshing snack. I prep a bunch of these little turkey rolls on Sundays and grab them on my way out the door.

  • 2 cucumbers, sliced thin longways (I always use my $17 NoPro Mandolin for this)
  • 1 tomato, sliced thin
  • 1/2 lb deli turkey meat
  • salt, pepper, garlic powder to taste
  • 1 teaspoon dijon mustard
Place the tomatoes, turkey, seasoning, and a dab of mustard on top of the cucumber slice and roll it up. That's it. Make a lot for the week and store in a tupperware so you can grab and go all week!

And now for the surprise wedding! My brother and his fiance are not into doing things the traditional way, so they invited everyone to their new house for an "engagement party". When everyone showed up one of the friends gathered everyone for what appeared to be a toast- talked about how they are spontaneous and break the mold and said "A good example is today. While you all think you're here for an engagement party, it's actually their wedding!" Everyone cheered. I cried. It was beautiful. Here's my photo dump:

I found an amazing deal on a PENTHOUSE downtown on AirBnB - this view!! And it was big enough for us to host everyone for an after party and a brunch the next morning:

Thursday night we went out to see some live blues on Beale Street (if you ever make it to Memphis, Beale Street is a lot of fun!)

Ate some famous Memphis dry rub at Rendezvous:

Then went to the "Engagement Party" where they found a good use for the bathtub they ripped out of the old house:

This is when we all thought we were gathered for a toast- my brother's 2 best friends found out they were groomsmen about 5 minutes before this picture:

My MARRIED brother and me!

Have you ever been to a surprise wedding? Do you HATE KEEPING SECRETS like me? What is your favorite healthy snack??

  1. Wait a surprise wedding!! That's the best idea ever. Fun, family but without all the planning drama. Love it

  2. I love that they are so non traditional! I bet it was really great just making it low key and enjoying everyone's company. That snack sounds sooooo good! I will be making it! Would you suggest any resources on getting started eating clean?

  3. Mmmk so numero uno: I'm drooling over that snack and just pinned it. Numero dos: That is so exciting about your brother!!!!! Congrats to the newlywed :)

  4. My 37 year old husband still has a thing for Welch's fruit snacks. Gets them every time we have a road trip ;)

I've never been to a surprise wedding, but what a fun concept!

  5. A surprise wedding - how fun!! Congrats to your brother and your new SIL! xo, Biana

  6. That surprise wedding might be the coolest thing ever!!! We planned our wedding one week in advance, just Chris and I, our photographer friends and the ordained minister. We told everyone via Facebook relationship status update and a picture :)

    And that snack looks delicious!

  7. aww what a lovely wedding, i love the idea of a surprise wedding.
hmmm cucumber tomato and turkey sounds deeeelish.

  8. I've never heard of a surprise wedding but wow! It looks awesome!!! I probably would have cried too haha. And I've heard so many great things about AirBNB lately- I'll definitely have to check them out! Congrats to your bro and new SIL!

  9. I just decided. If i ever get married again it's going to be a surprise wedding. Done. I LOVE it!!! If you haven't seen Emily Maynard (former bachelorette) surprise wedding google it. Ahhh-mazing!!! Ok, the turkey cucumber rolls are genious!!! I can't wait to try them. Paleo snacks are the hardest for me too. Usually its a spoonful of almond butter or deviled eggs which I make all the time:)

  10. Amazzzzing!! Congrats to your brother. The BBQ looks amazzzing

  11. A surprise wedding? Yes!!! Love it! How seriously precious!

  12. The idea of a surprise wedding seems like fun, but I'm horrible at keeping secrets, so I don't think I could personally do it. But it would be fun to attend one! Oh and I'm totally needing some new healthy snack ideas, so I'm definitly pinning this one. If you have any more, please share :)

  13. never been to one. the tub is genius!!

  14. How sweet! Congrats to your brother and his new wife! :) My sister also had a surprise wedding. She wanted something small, so she tricked us into getting dressed up for a family photo. Once we were all dressed up she told us that they had finally set a date for the wedding and it was that day. It was perfect. We followed them to location out in the Texas hill country where they got married and then we went out to dinner afterwards. It was just the immediate families (my parents, me, the groom's parents, his brother and niece and nephew). Even the person who married them was a close friend. :)

  15. That snack looks AWESOME.

And Secret Wedding - - - man oh man - Why didn't I think of that?

  16. Surprise wedding is cool but I have to say the tub with kegs of beer in it AT the surprise wedding really ices the cake!

The turkey rolled in cucumber looks amazing and I used to love making these types of rolls loaded with veggies and lunch meat. It has been a while though and I am thinking I need to reintroduce it into my life after seeing that pic.

What an amazing view at the place you stayed!

  17. I've never been to a surprise wedding, but it looks like a wonderful and a special moment. It would be a honor to be apart of that. Great photos :)

  18. I have been dying to make some of those cucumber rolls!!
I LOVE that they had a surprise wedding! How fun!!
