Stir Fry!!

Clean(ish) stir fry! So I know rice and condiments are a little controversial but we used brown rice and when it comes to condiments as long as we're using a small amount I'm ok with it.

Prep Time: 15 mins
Cook Time: 15 mins
Servings: 5
Ingredients:

  • 2 chicken breasts $2.00
  • One zucchini squash $1.00/lb
  • Half onion $.50
  • 1 yellow pepper $.75
  • 1/2 cup brown rice $.50
  • Soy sauce to taste


Cube the chicken breasts and pan cook on the stove. In a separate pan saute the onions. Once they have been cooking about 5 minutes add the pepper and squash. In a big pan combine the cooked rice, chicken, soy sauce and veggies. Stir it until it's all nice and stir fried.

  1. Made the Stir Fry last night! It was great and the boys liked it too! We don't like onions so I left those out. Also, we moved into a new place and I only had Louisiana Hot instead of Soy Sauce so I used that. It made it more of a spicy stir fry which we love so it worked out okay! I'm still going to make it with soy sauce and maybe a little dab of hot sauce ;) Not sure if we eat huge portion or what but I followed the exact amount of the recipe and only had enough for 3 adult servings, but it worked out since there was only 3 of us anyway. Tonight I'm trying the Greek Chicken and Salad!
