Leftover Turkey Salad

This happens every year- I go a tad overboard packing up leftover turkey and by Tuesday I feel like if I even smell one more turkey sandwich (on Ezekiel bread) I'm going to projectile vomit all things Thanksgiving. So this year I decided to switch it up- sandwiches one day and delicious salad on the others. Plus this salad tastes kinda fancy..goat cheese has that effect I guess.

Ingredients:
  • 1 lb baked turkey (free because it's leftover from TGiving!)
  • 3 heaping scoops of Greek Yogurt ($1.00)
  • 1/3 onion, chopped ($.30)
  • 1/2 cup chopped walnuts ($1.00)
  • 1 cup goat cheese ($2.00)
  • Leftover Clean Cranberry Sauce (this time I added juice from 1/2 a medium sized orange)
Cut up the turkey into small pieces. Add sea salt and pepper to taste. Also experiment with more or less Greek Yogurt- if you like it creamy add more, if you like it less creamy add less. Combine all the ingredients in a bowl and mix well. I ate this for lunch on top of Ezekiel toast and lurrvveed it. But who doesn't love goat cheese?
