Clean Eating Fiesta Stuffed Chicken + Home Reno Updates!

Happy Tuesday! Is anyone else really not feeling this Tuesday? Is it summer yet? Is it time to move into the new house yet (the answer to that is no- more on that later).

Last week I made this yummy fiesta stuffed chicken, and here's the recipe just in time for one of my favorite holidays- Cinco de Mayo (which happens to fall the same weekend as my birthday- Lindsay de Mayo sooo..)

Servings: 2
Prep Time: 15 mins
Cook Time: 25 mins

Ingredients:

  • 2 Chicken Breasts, thawed ($5.00)
  • 1 cup chicken broth
  • 1 Bell Pepper, diced ($.80)
  • 1/2 Large onion, diced ($.50)
  • 2 cloves garlic, minced
  • Lime Juice of 1 lime ($1.00)
  • 1/3 Cup Fresh Cilantro, fresh ($.50)
  • 1 Tablespoon Cumin
  • 1 Tablespoon Paprika
  • 1 Teaspoon Sea Salt
  • 1 Teaspoon Black Pepper
Preheat the oven to 425 degrees. Butterfly cut the chicken breasts (see here for a 10 second tutorial). Season the chicken breasts with cumin, paprika, salt and pepper.

Combine the bell pepper, onion, garlic, lime and cilantro- now you have pico de gallo! Spoon the pico evenly onto one half of each chicken breast (one butterfly wing?). Fold the other half over so you basically have a taco with a chicken shell and pico stuffing.

Place the chicken breasts into a baking pan and add the chicken broth. Cook for 20-25 minutes, or until the chicken breasts are cooked all the way through. 

I chopped up some sweet potatoes that I seasoned with cumin and sea salt, and cooked in the oven with the chicken breasts and topped with some extra pico de gallo that I made. YUM!




And now for Home Renovation Update: Self Reflection Edition. In this process I have learned a few things about myself:
  1. I am extremely Type A (Type A + perhaps?)
  2. I need to control everything
  3. There are approximately zero things I can control in this project
  4. I live by deadlines, timelines and checklists. If all my boxes aren't checked off, then the day is not over yet.
  5. Deadlines, timelines and checklists are mere suggestions for contractors. Checklists apparently do not exist in this industry.
  6. When things are off schedule, I am thrown into a tizzy and get completely stressed out (sorry, Dad, for my major temper tantrum the other day re: things not running on schedule)
  7. Nothing in construction runs on schedule.
  8. I feel like when I can't oversee everything, nothing will happen right.
  9. I haven't overseen anything for the last week and everything is completely fine.
So I guess God is telling me to let go of some control huh? It's hard to teach this old dog new tricks, but I'm trying to give over some of the control and be a little more Type B about this. I'm so thankful to have my parents helping out and doing so much of the projects because a) I trust them and b) they understand how psychotic I am because they made me and c) they explain everything to me, including WHY things have to run behind schedule.

  1. Oh oh I love that shelf that runs alongside where the refrigerator is! You can never have too much horizontal space in a kitchen, I say. You're so lucky to have your parents helping out! I wish I lived near family so they can watch the kids and I can build crap. Haha!

    Um...I have really been digging orange back splash that would really compliment your cabinetry. The 12x12 mosaic tiles. Anyway, I love your remodeling!

  4. I love this! I completely understand, checklists are my BFF's. Sometimes, I'll even write things to do on my checklist that I have already done just to check it off and make myself feel better. Can you say weiiirrddddoooo?? LOL! Soon enough your home will be ready to go!

  6. The kitchen and closet look great! I would do a white backsplash…maybe subway tiles with light grey or off white grout. Then paint the walls a light grey or another light color so that the dark cabinets really pop agains the lighter walls.

  7. I am Type A+ too!!! I understand the checklist, the boxes, and the temper tantrums that sometimes happen if being off schedule gets inside and makes everything feel like it's GOING TO DERAIL!!!!

    But, I digress *Takes deep breath*

    The kitchen remod looks wonderful!

    I think that you should go with a lighter color... The room seems to get a fair amount of light, but with the dark cabinets, you may want to keep it still feeling "bright" even at nighttime.

    I'd go with something neutral with small pops of color:

    And then for the walls.. a light coffee color? Or if you like a pop of color.. maybe a sage green?

    Decorating is so FUN!
    But, daunting, because.. you have to live with it for AWHILE!

  8. I love glassy looking ceramic tiles or subway tiles for kitchen back splashes. They always back such a huge impact. As far as color goes though....I dont know that is such a hard decision! The cabinets are beautiful and would go well with nearly anything! I guess it depends on what look you are going for.

  10. Lol I love Lindsay de Mayo! That recipe looks super yummy! I feel you on the home reno. I don't think that a kitchen reno can ever be fun. I'd go with a light color too. Love the super light blue Young House Love used for theirs. But then I'm pretty much obsessed with them :)

  15. That chicken looks seriously good...how about we throw some cheese up in there? I know...I know...it wouldn't be healthy, but it's begging for mozzarella. :) Your kitchen is coming along really well! Lovely cabinets and appliances. I would paint the walls an aqua or turquoise...it will look great with the brown and silver. Good luck!

  18. I can't even imagine how much you want to cry during a home reno. I hope one day to just hire people to oversee those contractors so I can go on vacation and come back to a perfect house. Now I just need to have the money to do that...and buy a house...I can dream!
