Oh and sidenote: At first I was embarrassed to post pictures because I was all like but I don't even own a mixing bowl and I make huge messes and then I was like You know what? This just goes to show that you don't have to have anything fancy to cook clean. We literally don't even own mixing bowls, I mix everything in giant tupperware (woo DC kitchens with no storage space!) and I don't own anything like a whisk or a food processor (hence the reason things get a little messy). Someday when I win the lottery or change professions I'll invest in cute Pottery Barn matching mixing bowl sets, top of the line food processors, and a kitchen the size of a 2-bedroom condo with counterspace the size of a DC backyard, but for now it's working! So, cough cough, no excuses!
Servings: breakfast for the week for 2
Cook Time: 40 minutes
Prep Time: 15 minutes
Ingredients:
- 2 cups Old Fashioned Oats (or Steel Cut) ($.50)
- 3/4 Cup Natural Maple Syrup ($.50)
- 1 Tablespoon Cinnamon
- 1 tsp baking powder
- 1 Cup Raspberries ($4.00)
- 1 Cup walnuts, chopped (huge bags for $4.99 at Giant- these are freezable)
- 2 Cups unsweetened Almond Milk or Coconut Milk ($.75)
- 1 large egg ($.25)
- 1 Tablespoon Vanilla Extract
- 1 Bannana, peeled and sliced($.10)
In a large mixing bowl (or large tupperware), combine the oats, syrup, cinnamon, baking powder, half of the raspberries and walnuts. Mix well.
In a separate bowl (or tupperware) combine the milk, egg and vanilla. Stir until the egg and vanilla are totally beaten in.
Spray a brownie pan with cooking spray or olive oil or coconut oil, anything to keep this concoction from sticking to the pan for life. Spread the oatmeal mixture out evenly in the pan. I know it seems super thin, but I promise it turns out fine! Now dump the milky-eggy-vanillay mixture evenly on top. Shake the pan a little if you need to get that milk to settle in.
Top it with the remaining raspberries and banana slices and throw it in the oven for 35-40 minutes and enjoy the amazing smell. Let it cool awhile before you eat it.

ReplyDeleteI wish the size would have been specified. I used my 11x7 pan (that I usually use for brownies) and after 30 minutes, there was still a puddle of milk in the middle. I tried to pour some out and wound up dumping the whole pan into the sink. I would recommend using a 9x13 pan for this, maybe even bigger if you want them to be crisper. Hope that helps!

DeleteI just popped this in the oven. I used peaches and blueberries and instead of maple syrup I put half a cup of a Strawberry Peach fruit spread I had on hand. I also used Vanilla Almond Milk as I didn't have regular so I skipped the vanilla extract. Fingers crossed it comes out!!!! Smells wonderful and I cannot wait to try it :) Thx for the recipe!

I know they are a lot harder and compact then regular oats...not too sure how that would cook properly?

For the fruit, I used fresh strawberries and blueberries. And also added small pieces of dark chocolate. It turned out really good. We ate it for breakfasts last week. My husband can't wait for me to make it again.

ReplyDeleteThese are currently in the oven and oh my god, the smell. I wish they made a perfume in this scent; it is so heavenly. I used agave instead of maple syrup and added flax seeds too. This is a great versatile recipe and I will 100% be using this when I go back to school in the fall for quick breakfasts before class. Can't wait for the timer to be done!
