Clean Eating Chicken Avocado Soup

I spent last week snowed in with the rest of the east coast. But with the flu. THE FLU. 5 years of barely getting paid for working in public schools, I've always thought "well at least I've gained a steel immune system". WELP the ole steel immune system let me down bad. This was the can't-focus-can't-do-anything-but-lay-down-and-stare-at-the-ceiling kind of flu. I ventured off the couch to make some chicken soup which actually turned out incredible. INCREDIBLE! And I hated everything last week! Everything except this soup:

Prep Time: 20 mins
Cook Time: 40 mins

  • 1 lb chicken thighs (I use the thighs because I loove the juiciness. If you're watching fat intake closely use chicken breasts) ($5.00)
  • 32 ounces (or 4 cups) low sodium organic chicken broth ($4.00)
  • 2 cloves garlic, minced
  • 1 bunch of green onions, finely chopped ($3.00)
  • 1/4 red onion, diced ($.25)
  • 1 medium tomato, diced ($.50)
  • 1/2 cup quinoa, cooked ($.75) 
  • 1 chicken buillon cube ($.25) (Click here for a cleaner substitute)
  • 1/2 cup cilantro, chopped ($.50)
  • 1 ripe avocado, diced ($1.25)
  • 1 tsp cumin
  • 1 tsp salt
  • 1 tsp pepper 
  • 1 tsp olive oil/coconut oil
Line a medium sized frying pan with cooking spray/olive oil/coconut oil (whatever your preference). Season the chicken with salt and pepper and cook covered, for 10-15 minutes on each side (you know it is cooked when there is no pink in the middle when you cut into it with a knife). Once the chicken is thoroughly cooked, place it on a cutting board and shred it using 2 forks (if it's too tough use a knife to cut it into teeeeny pieces).

In a large pot saute the red onion, green onion and garlic with the olive oil (or coconut oil) for 4 minutes. Add the tomato and saute for another 1 minute. Add the chicken broth, cumin, quinoa and buillion cube to the vegetables and bring the broth to a boil. Once it boils turn the heat to low and simmer the soup for 20 minutes. After the 20 minutes mix in the chicken to the mixture.

Divide avocado chunks and cilantro into the serving bowls (it was just two of us eating so I put the rest into a tupperware and added it to my leftover soup later in the week). Pour the soup over the avocado and cilantro and enjoy!
