Steak & Veggies One Pan Meal + Weekend Recap

Monday, April 7, 2014

Woww it has been a whirlwind weekend! I took a half day Friday to fly down to Savannah, GA for a college friend/sorority sister’s wedding and got back laaate last night. Yall I had the best freaking time. I forgot how friendly everyone in the south is, I also forgot that just because I’m with college friends does NOT mean I can drink like I’m in college (sidenote: warm weather + sunshine + NO OPEN CONTAINER LAW = happy girl). And the wedding! OMG! The bride did it all herself and it was all perfect- I’ll have a recap up for this week’s Friday Favorites of the best budget-friendly/DIY elements of the wedding.

Today’s recipe is one of my go-to busy night recipes. It’s easy to chop up the veggies on my Sunday meal prep night and can just throw everything in a pan and cook it up. It also makes great leftover lunch!

Ingredients:

  • 6 oz steak (I buy whatever kind of steak is on sale, this time I used NY Strip)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, chopped
  • ½ white onion, diced
  • 1 clove garlic, minced

Heat a non-stick pan over high heat. Season the steak with 1 teaspoon garlic powder, 1 teaspoon sea salt, and 1 teaspoon black pepper, and optional steak sauce.

Place the steak on the heated pan and let it cook, uncovered, for about 2-3 minutes on each side (sidenote from Harrison: to ensure your steak cooks evenly on each side, when you flip the steak let it cook on a different part of the pan).

Once the steak is cooked to your liking (I like mine pretty much mooing- just me?) remove it from the heat and allow to cool for a few minutes. Turn the stove heat down to medium. Chop the steak into small cubes.

Add the peppers and onion to the frying pan and let cook about 2 minutes. Add the garlic and zucchini, and cook with the other veggies stirring constantly. After about 5 minutes, add the steak cubes and mix together well, allowing the veggies and steak to cook for another minute or two.

Add any sauces and a side salad and enjoy!

PS: Here’s a little preview into Friday's post/my weekend:
Please excuse the "Drunk" filter I used for this one...

Is that not the most beautiful wedding dress EVER?

We cleaned up nice after recovering from a "we drank like we were in college" hangover
PSS: My outfit: $20 dress from the junior's department at Dillard's (I'm sure some high schooler wore this to prom on the same night)//$10 Steve Madden Nude Pumps via Goodwill (one size too big so I stuff newspaper in the toes to make them fit)//necklace: FREE Moni Bijoux via Piper-Dixon's contest. And did my own "low romantic side bun" via this youtube vid.

Savannah you are so freaking beautiful!

  6. Thanks for sharing that recipe--I really think I'm going to make it. I am a terrible cook, but that seems simple enough for even me. :) I'm glad you had such a good time in Savannah--one of my best friends lives there, and I'm considering moving there!

Second, I love the name of your blog!

Third, I'm here because I'm hungry and found this post on Pinterest. We live in a travel trailer touring the country full-time with my husband's Christian music mission, and we're always looking for simple one-skillet meals to feed our crew. Oh, our crew, yeah--we travel with our eight kids, a dog and a kitten.

Thanks for the recipe! You've been repinned!
