3 Ingredient Crockpot Buffalo Lettuce Wraps + Weekend Recap

The oven guy finally came and we finally have an oven back! But I cooked all things crockpot for the last 2 weeks so that's all that's going to be on the blog for awhile. Meg blew my mind when she told me I can cook ground turkey in the crockpot (I know, where have I been) and she told me just in time because we were about to stab our eyeballs out if we had one more bite of crockpot chicken. This came out so delicious and everyone liked them!

Servings: 5
Prep Time: 5 mins
Cook Time: 5 hours on high

Ingredients
  • 1 lb lean ground turkey, thawed ($3.50)
  • 1 cup buffalo sauce (I use Frank's Hot Buffalo)
  • 1 8 oz can of sugar-free natural tomato sauce ($1.00)

For serving:
  • Blue Cheese crumbles
  • Iceberg Lettuce
  • Diced onion
  • Green Peppers (I actually tried adding the green pepper in the crockpot and it came out pretty good but they were real mushy, ew)
  • Tomatoes

Combine the turkey, tomato sauce and buffalo sauce in a crockpot on high for 5 hours or low for 8. Mix occasionally. That's it! We loved them! You could also do this on the stove by browning the turkey then adding in the tomato sauce and buffalo sauce and cooking for about 10 minutes.

This weekend was a blast- we went to a friend's wedding at Weatherly Farms in Newburg, MD (about an hour outside DC) and OMG it was beautiful!! We got there Friday afternoon for some set up and the rehearsal- just look at this place:


Friday we had the rehearsal dinner at Oak Crest Winery where I tried a white wine called Hot Jazz which has JALAPENO in it. I don't usually like things that aren't the way they are supposed to be (such as wine with jalapeno) but I am so into this wine. It was perfect with the fried chicken dinner. We got to do a wine tasting before dinner and just look how beautiful this place was:

After Carty's wedding a few weeks ago I think I legit sustained a stress fracture in my left foot from dancing too hard in heels, so I was excited to try Dr. Scholl's DreamWalk™ High Heel Insoles which I got to sample for FREE thanks to BzzAgent. I left them sitting on the floor like this and when Harrison saw them he asked me why I always "leave my tampons everywhere and why is there a tampon in your shoe"...So many things about that statement.


And all I need to say about how these insoles worked is that I danced my booty off for 4 straight hours and ran 4 miles the next morning. I will be buying these for every pair of heels.

Ok and can we just talk about the porta-potties?! They had CANDLES in them. These porta potties were nicer than my own home bathroom:

    How beautiful is that place? HOLY COW!

    White Wine with Jalapeno.. I got to see if I can buy from this vineyard... I'm more a RED girl.. but I'd try some of this.. for a nice summer outdoor dinner. Ooooh, The wine store in town BETTER be able to order it for me!

    I love the simplicity of their beach wedding. So classy!

    And that's a PORTA POTTIE. Shut the front door.

  2. I love that your wrap idea is so easy and doesn't call for many ingredients at all! I have done buffalo chicken lettuce wraps using the crock pot before....but I never considered doing it with turkey!!! I am going to have to put this on my list next week to change it up some! Thanks!

  7. I love that you posted a pic of the porta-potties—I love that fancy ones exist. Also, thanks for reminding me to bust out the crockpot today. I have some red pepper jelly I'm trying to use up, so maybe I'll see what happens if I throw that in with some chicken or something.
