For the chicken
- 1 cup fat-free Greek yogurt $1.00
- 4 cloves garlic, minced $.50
- Juice from one lemon $1.00
- 1/3 of a bunch of fresh parsley, chopped $.30
- little bit of pepper
- 1 teaspoon oregano $.10 (I found a whole jar of dried oregano for $1.28. YES)
- 4 chicken breasts $4.00
Combine the yogurt, garlic, lemon juice, parsley, pepper and oregano in a bowl and mix together. Spoon all the marinade into a ziploc freezer bag and add thawed chicken breasts. I make the marinade the night before and store it in the ziploc bag, then add the chicken in the morning before I go to work. I let it marinate in the fridge all day, then put it in the oven at 400 degrees for 30 minutes or until cooked all the way through.
For the Garbanzo Bean Salad

- 1 can Garbanzo beans, drained and rinsed $1.00
- 1 cucumber, chopped $1.20
- 3 tomatoes, diced $3.00
- 1/3 large onion, diced $.30
- 1/4 cup feta cheese crumbles $3.00
- 1/4 bunch of parsley, chopped $.25
- 1 tablespoon balsamic vinegar
- Juice from half lemon $.50
Mix it all together and enjoy!
The chicken was a hit, and 3 out of 4 dinner guests enjoyed the garbanzo bean salad. I added a lot of balsamic vinegar to my salad and enjoyed it a lot more. I didn't get a picture of the bean salad because everyone was waiting for me to finish making it and I didn't want to be like "hold on one more sec while I take a foodpic" because that's awkward. I also want to point out that we fed 4 people for $16.15. And if you count the 2 bottles of wine we drank that adds $10 to the cost. Man I love being cost-effective.

Not sure if my last post posted. I said this was really good and my husband loved the garbonzo bean salad. He said "If this is healthy, I would eat this all the time" :-) SCORE!!! Thanks for a great meal
