This happens every year- I go a tad overboard packing up leftover turkey and by Tuesday I feel like if I even smell one more turkey sandwich (on Ezekiel bread) I'm going to projectile vomit all things Thanksgiving. So this year I decided to switch it up- sandwiches one day and delicious salad on the others. Plus this salad tastes kinda fancy..goat cheese has that effect I guess.

Ingredients:
- 1 lb baked turkey (free because it's leftover from TGiving!)
- 3 heaping scoops of Greek Yogurt ($1.00)
- 1/3 onion, chopped ($.30)
- 1/2 cup chopped walnuts ($1.00)
- 1 cup goat cheese ($2.00)
- Leftover Clean Cranberry Sauce (this time I added juice from 1/2 a medium sized orange)
