Paleo Barbecue Meatballs

We had people over the other night to watch a UFC fight (someone please explain how I get sucked into things like fights? Why was I cheering?) and these little BBQ meatballs were a perfect party food. Filing these into my mental index for superbowl party foods.

Sidenote: I had a massive home-made bbq sauce fail so served these with the bbq sauce we had on hand (Sweet Baby Ray's - OMG DELICIOUS but def not paleo friendly). Next time I'm going to try Skinny Ms' barbecue sauce recipe.

Servings: 20 medium sized meatballs
Prep Time: 15 mins
Cook Time: 40 mins + 15 mins

Ingredients:

  • 1 lb lean ground turkey ($4.00)
  • 1/2 onion, minced ($.50)
  • 1 egg
  • 1/4 cup almond flour (or any flour you have on hand, this is just to make sure they stick together)
  • 1 Tablespoon Paprika
  • 1 Tablespoon Ground Cumin
  • 1 Tablespoon Chili Powder
  • 2 Cups Paleo BBQ Sauce + 1 Tablespoon
Preheat oven to 400 degrees. Cover a baking sheet with aluminum foil and spray down with coconut oil spray or any nonstick spray you prefer.

In a large bowl, mix all the ingredients except the 2 Cups bbq sauce (DO add the 1 Tablespoon of BBQ sauce). I do the mixing with my hands.

Form 2 inch balls and put onto the baking sheet and heat in the oven for 40 minutes.

Once the meatballs are cooked, combine the meatballs and 2 Cups bbq sauce in a medium sized saucepan. Simmer on low heat for 15 minutes, mixing constantly.

  6. i made kale and artichoke dip for my bachelor premiere party last night. not the MOST healthy but i use greek yogurt instead of sour cream which i consider a win! :)

  11. I definitely need to catch up on this Paleo kick that you are on. I'm kind of intrigued and would love to try these recipes. Especially these meatballs. Why yes, I do have a barbeque sauce you should try. It is claimed to be all natural, from the lovely state of South Carolina (and only South Carolina which kind of stinks). It is called Slatherin' Sauce, and it is bomb-diggity. IF you like sweet. I mean, it's one of those universal sauces, that can go on everything. There is not a huge tangy kick to it (though I think the company sells one with). I don't know, I just love it I should write a review and do a giveaway or something. Anyway! Saving this recipe for later. Thanks girl!

  12. I hate to admit, but for things like football parties, I usually throw my diet standards out the window! We went to a Texas Hold 'Em party for NYE, and I ate Velveeta cheese dip! I mean, whut?! I was also bloated for about 2 weeks after that. Maybe I should try upholding some standards for these things... These look great! I've never made a meatball not covered in marinara sauce, and this would be a great change.
