Turkey Lettuce Wraps

Sidenote- whoever takes good pix of lettuce wraps MUST be a professional. These puppies are ugly no matter how you frame it.

After I made the quiche I still had half a pound of cooked ground turkey left over. Hmm what to do what to do. I mixed it up with the leftover bruschetta from the garlicy bruschetta turkey burgers and some black beans and crushed garlic, topped it with fat-free Greek yogurt and hot sauce, and made lettuce wraps! Here the recipe:

For the bruschetta:
  • 1/4 Cup diced onion ($.50)
  • tiny bit of olive oil
  • 1 Tbsp Balsamic Vinegar (no clue how much this cost because I bought it as Costco forever ago)
  • 3 medium tomatoes- diced ($1.50)
  • 3 cloves garlic- minced (we love garlic ok?)
  • 2 Tbsp Basil leaves (I used dried basil leaves from Snider's. The whole jar of seasoning was $1.28! There is not much I hate more than spending $5 for tiny jars of seasonings. Thank you, Snider's
  • Mix it all together
Top lettuce leaves with turkey. Spoon bruschetta and fat-free Greek yogurt on top. Add hot sauce to taste.
