Supper:
Monday: Italian Quinoa Bake with steamed broccoli and cauliflower
Tuesday: Tuna Melts with sweet potato chips
Wednesday: Steak with Cucumber, Tomato and arugula Salad
Thursday: Taco Night!! (Lettuce Wrap Edition). We used Fat-Free Greek Yogurt as sour cream substitution and served with avocado sauce home made pice de gallo, and sauteed bell peppers with onions
Friday: Leftover Schmorgishborg
Shopping List:
- Dozen Eggs
- Frozen Fruit of your choice (my go-tos are strawberries and blueberries)
- Bananas
- Fat-Free Greek Yogurt
- Almond Milk
- Quinoa
- 2 cans diced tomatoes
- 2 cans of tuna
- 1 can black beans
- 4 avocados
- 5 tomatoes
- 1 Sweet potato
- Italian seasoning/fresh herbs of your choice
- 1 zucchini
- 1 large onion
- 2 bell peppers
- Lettuce of your choice (I always pick arugula and spinach)
- 1 loaf of Ezekiel Bread (found in the freezer aisle)
- Frozen veggies to serve as sides
- Mozzarella Cheese
