When I started clean eating the first two weeks were pretty miz- I was hungry (hangry) all the time and just wanted my regular ole easy processed foods and snacks back! Plus I couldn't figure out how in the WORLD people found energy to exercise without eating energy bars and drinking Diet Coke.

The truth is, our bodies function best when they are getting all the nutrients they are supposed to get, which is a lot of stuff you don't get from microwave meals and Subway sandwiches. Sounds pretty basic, but this is kind of a hard one to plan for when you have lived (what you thought was super healthy) on bread, Diet Coke, zero calorie snacks and frozen entrees for 27 years. Here is my list of power foods - clean foods - that keep me going during day and with enough energy to exercise after work.

One thing to note: I really had to change my mindset when I started eating clean. To me fat, carbs and calories were the enemy- I was probably more scared of those 3 things than getting struck by lightning (my biggest fear which is a story for another day) or giant spiders. I did a lot of reading and found that  there is a right way to do fats, carbs and calories, and now when I'm checking nutrition labels at the store it's to make sure I recognize all the ingredients and NOT to make sure it is low calorie/carb/fat.

1. Almonds
High in protein, fiber, Vitamin E and magnesium (magnesium helps with blood sugar), these are tiny capsules of energy. Also I read a study that found people who eat almonds daily are more likely to lose weight than those who don't. Of course I can't find it anywhere to post but I promise I read it! Just be careful, these are easy to mindlessly snack on so I portion out about 10 for my snacks
How to incorporate: Overnight oats, breakfast bakes, salad topping, casserole topping, snack




2. Greek Yogurt
High protein, low carbs, low lactose (woo lactards!). What else do you need to know!
How to incorporate: My fav way to eat this is with honey and/or fruit. It works as a substitute for pretty much all things creamy.

3. Leafy Greens
We all used to watch Popeye immediately bulk up after eating his spinach, and while we won't see THAT extreme of results, we do experience decreased fatigue and more alertness due to the high iron levels. Iron deficiency is especially common in women so it's essential to get plenty of these puppies in the diet.
How to incorporate: Salads, green smoothies, sauteed sides



4. WATER
This is probably the most important factor in energy levels. Our blood is 80% water and helps the blood absorb nutrients and facilitate digestion. Dehydration = brain clouds (the worst), fatigue, and weakness. And it's free.
How to incorporate: I try to drink a cup of water each hour.



5. Carbs via Natural Sources
Carbs get a bad rap but they are where our bodies go for 40% of our energy. There's nothing wrong with getting carbs from natural sources like fruit, starchy veggies and sweet potatoes.
How to incorporate: Snack on fruits and veggies with hummus or fruit dip, smoothies, salads, honey



6. Eggs
Eggs have the highest amount of protein of any other food and supply 30% of our daily protein needs. And they're cheap. And they're easy to cook. Liiiike what else do you need? The protein gives us energy, keeps us full longer, and improves brain functionality.
How to incorporate: Breakfast casseroles, hard boiled, scrambles


6. Healthy Fats
OK READ THIS BEFORE YOU CLICK AWAY- I know when I used to see the words "healthy fats" I was like "yeah nope bye!". However healthy fats are necessary for our bodies functionality- they are good for our hearts, have been found to prevent cancer, and help our bodies absorb fat soluble vitamins (E, D, B, K). The fats we need to stay away from are yucky fats that come from unnatural sources. As with anything, moderation is our BFF, and if you are working on losing weight moderation of these is REALLY our BFF.
How to incorporate: Avocados, egg yolks, nuts, nut butters, fish (salmon, mackerel, tuna), coconut oil, olive oil


One last way I have found more energy was cutting out Diet Coke. This was the hardest for me, but after reading Erin's article on benefits of cutting DC out, I had to do it. I'm not going to lie- the first 10 days were hell. I had killer headaches and would fall asleep on the bus every afternoon. But I've been DC free for a month now and don't even think about it anymore! Ever! No more 2:30 pm crashes and my sweets cravings have gone down.

Ok these little ditties were so good and took about 5 seconds to prep. I was super rushed the other night but determined not to eat out in between small group/work/exercise/dog walking so I threw these together and WHOA.

Servings: 1-2 (depending on the size of the sweet potato and how hungry you are- I ate almost the whole thing)
Prep Time: 5 mins
Cook Time: 15 mins

Ingredients:

  • 1 sweet potato, scrubbed ($.80)
  • 1/3 cup mozzarella cheese, shredded ($.40)
  • 3 Tablespoons CLEAN (aka no sugar added, low sodium, etc) tomato sauce or crushed tomatoes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic seasoning
  • Any other toppings you would put on pizza (bell pepper, mushrooms, onions, fresh tomatoes..)


Preheat the oven to 425 degrees. Slice the sweet potato with a mandolin. Place the sweet potato slices onto a non-stick baking sheet (my baking sheet is so raggedy I cover it with parchment paper to make it non-stick). Throw the sweet potato slices into the oven for 10 mins.

After 10 minutes, pull the slices out and spoon the tomato sauce evenly onto each sweet potato slice. Now sprinkle mozzarella cheese onto each slice. Sprinkle garlic and Italian seasonings to your liking onto each one, and add any other toppings.

Heat in the oven for 5-8 minutes.

And that is it. It is laughably easy.

OH also we went to check on the new house renovations today!! They just pulled up all the nasty carpet and there are beautiful wood floors underneath! Here are the "before" pix- stay tuned for updates!!

A few months ago I published a post on Clean Eating Tailgate foods. Super Bowl is one of the best times to convert people to clean eating- show up with delicious snacks and people are like "Ohh this is so good" and then I'm like "yeah yall and it's clean!" and they're like "wait are you serious?" and then I'm laughing to myself. So for a little super bowl snacking inspiration, here are all my clean snacks that are totally appropriate for Super Bowl Sunday.

And in honor of Bruno Mars' halftime show, my favorite Bruno song (Gorrilas) WITH R.KELLEY. Really who doesn't love little tiny Bruno when he hits those high notes, and R. Kelley..well he's a great singer he just needs to stay off twitter, or to fire his publicist. Actually on second thought, keep it up R. I laughed so hard at the hashtags that came out of that.

Can we just talk about hard boiled eggs? They are so simple yet so much can go wrong- the shells can stick to the eggs, the eggs can be too soft, the eggs can be overcooked... the list goes on. But last weekend was jam-packed with friends in town, a concert, and a post-church bottomless brunch that caused me to be completely worthless on Sunday night, meaning grocery shopping did not happen, meaning the only food in the fridge was half a tub of Greek Yogurt and 8 eggs. So I boiled some eggs for my breakfast for the week. Delicious, nutritious, and oh so filling.

Here's how I did it, including my secret ingredient that ensures those shells don't stick to the eggs (ugh really what is worse than spending approximately 30 minutes peeling an egg only to end up with half of the hard-boiled egg surviving the peeling disaster?) and that the eggs are perfectly boiled (what else can you ask for?). Plus this is so easy, it takes minimal effort (obviously since I did this after a bottomless brunch).

Prep Time: 5 mins
Cook Time: 10 mins

Ingredients:
  • Eggs (however many you want)
  • Water
  • 1 tsp Baking Soda
Put the eggs in one layer in a pot. Add enough water that the eggs are covered with one inch-ish of water. Now add 1 teaspoon of baking soda (this is the secret ingredient that makes sure your shell doesn't stick to the egg! I read about 10000 theories on why this is and decided, hey it works I don't need to know why).

Place the pot on the stove with the heat on high. Bring to a rolling boil (example of rolling boil below- it's like warzone boiling). Let the rolling boil go for one minute (set a timer). Once the minute is up, remove the pot from the heat, cover the pot, and let the pot with hot water and eggs set for 10 minutes (set your timer again!).

After the ten minutes, transfer the eggs into a bowl. Fill the bowl with ice water and let the eggs set in the ice water for 5 minutes.

And that's it! You have perfectly easy to peel hard boiled eggs!

Confession: I love fake cheese, especially fake cheese on top of fake chili on top of greasy fries- with lots and lots of fake cheese. Like, the faker the cheese the better. I hate baseball but you can find me at a Nat's game any day shoving through the crowd at the concession stand for some of that disgusting liquid nacho cheese. OMG and Velveeta! So needless to say chili cheese fries are a major point of weakness for me.

So I had lots of Turkey Chili leftover from the polar vortex weekend and came up with this. While there is no fake liquid cheese involved it truly hit the spot, and major bonus: not waking up in the middle of the night with heartburn, cramps, and horrible things going on inside my stomach. And you know what? It was really filling because of all the protein and fiber.

And just look how the nutrition facts stack up against each other:


Sonic Chili Cheese Fries
Broke and Bougie Chili Cheese Fries
Servings: 1
Prep Time: 5 mins
Cook Time: 25 mins

Ingredients
  • 1.5 cups leftover Crockpot Turkey Chili 
  • 1/2 large sweet potato ($.50)
  • 1 slice avocado ($.25)
  • 1/8 cup mozzarella cheese ($.50)
  • 1 teaspoon garlic powder
  • 1-2 scoops reduced fat Greek Yogurt
  • Juice of half lime ($.30)
Make the sweet potato fries- this time I used the mandolin to make large slices of the sweet potatoes and cut those into fries. Took a lot less muscle.

Once the fries are cooked pile them together on the baking sheet, scoop the chili on top of the fries, top with cheese, and return to the oven (at 450 degrees) for ten minutes.

Top with lime juice, garlic powder, Greek Yogurt and avocado. Enjoy!!

Let me just say how difficult it is to stay healthy during the holiday season, especially for awkward people such as myself who find ourselves standing next to the food table stuffing our faces and chugging drinks in an attempt to "look busy" and not have to make awkward small talk.

Since I always bring food and booze to the parties I attend anyway, why not bring clean snacks? If I'm going to awkwardly binge, it might as well be healthy right? Plus I love when people are like "omg this is so good what is in it? Wait is it seriously clean??" Trickery at its finest.

ZOOOOmmmMMGGG. Ok, this is almost embarrassing to confess but last weekend we even ate these on our cheat day- we just wanted something to go with our greasy burgers and these are seriously so much better than real fries. So enjoy this. I mean, really really enjoy. 

Oh and PS, they take about 15 minutes to make. I mean this is just too good. 

Prep Time: 5 mins
Cook Time: 16 mins
Servings: 4 (4 "servings" of these babies = 1 for me..not sorry- they're super low carb and low cal)

Ingredients:
  • 1 sweet potato ($.88)
  • 2 Tablespoons coconut oil (melted) or olive oil
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
Preheat oven to 475 degrees (I know, I didn't even know my oven goes this high). Slice the sweet potatoes into the inch thick fries (this takes some muscle, those sweet potatoes are tough!).

Line a baking sheet with aluminum foil or parchment paper. Combine the seasonings (you can use any seasonings you want) with the oil and mix well. Toss the fries in the mixture and spread out in one layer (CAUTION: DO NOT STACK THEM ON TOP OF EACH OTHER! YOU WILL RUIN EVERYTHING- I speak from experience) on the baking sheet and put on the middle rack of the oven for 10 minutes. Flip the fries and allow to cook for an additional 6 minutes.

Let them cook for a sec and enjoy something better than the real deal..

Soo was no one going to tell me that you can put peanut butter IN Greek Yogurt? And that it is amazing? I'm bringing this on the holiday party circuit this winter so I can just stand by the food table and eat it up (yeah, I'm real awkward at parties).

Ingredients:
  • 1/4 cup Greek Yogurt
  • 1-2 Tablespoons Peanut Butter (PB is my weakness so I went a little over 2, but 1 tasted fine too) 
  • 1 Tablespoon Honey
  • 2 pinches of cinnamon
Mix the ingredients well and serve with any fruit you want. And I mean hey, eat it all at once if you want, it's that good.

The only picture I took before we devoured these babies

So this happened, and it. was. everything. I had these with a winter beer with all the Christmas lights on and it felt just like being in a bar eating greasy food. Except that I didn't have to drive home, I got to pick what played on the TV, my beer didn't cost $10, and my food was in fact not greasy. Not only was it not greasy it was CLEAN! Sidenote: when did I turn 60 and start liking sitting at home instead of going to a bar with other humans?

Oh and also this was really really easy to make. So enjoy while you lounge at your home-bar.

Prep Time: 3 mins
Cook Time: 10 mins
Servings: 10 sticks (which equals 2 servings in our house- 8 for the BF, 2 for me)

Ingredients:
  • 1 block fresh mozzarella cheese ($5.00)
  • 3/4 cup stone ground cornmeal
  • 2 tablespoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1 egg, beaten
Preheat the oven to 365 degrees. Combine the dry ingredients in a bowl and slice up your cheese block into rectangles, about 2 inches thick. Dip each stick into the egg, then roll the egg-coated mozzarella chunk in the dry ingredients until they are completely covered in a thick layer. Place them onto a baking sheet and heat in the oven for 8-10 minutes- check them right at 8 minutes to make sure they aren't melting!

"Man it smells like Christmas but it looks like someone took a dump in the crockpot!"*
-the BF's reaction to crockpot cinnamon-sugar almonds. I know it's not pretty, but it is so tasty.

*This was followed by 30 minutes of giggling  over the term "Christmas nuts"

Look I love Christmas food, even red and green M&M's taste better to me than regular M&Ms. So this year I am determined to curb the cravings. Here were two big hit snacks I brought to parties over the weekend, which took about as much work as opening a bag of Christmas candy and binge eating it.



#1: Cinnamon Sugar Christmas Nuts (I know LOL LOL. But they're good and clean and sweet)
Servings: 10
Prep Time: 10 minutes
Cook Time: 4 hours (in the crockpot. you don't have to do anything)

Ingredients:
  • 3 Cups Almonds (I bought a 5 lb bag for $6 and used some for almond crusted green bean casserole)
  • 1.5 Cup Stevia ($2.00)
  • 1/2 cup honey or maple syrup ($.50)
  • 3 Tablespoons Cinnamon
  • 1 Egg White ($.10)
  • 2 teaspoons vanilla
  • 1/4 cup water
Stir the egg white and vanilla in a large bowl until it's frothy/bubbly. Now dump the almonds in the bowl and mix together until they are coated in the eggy mixture. In a separate bowl mix together the Stevia and cinnamon. Add the sugar/cinnamon to the coated almonds. Put this into the crock pot, add the honey/syrup and stir well. Heat on low for 3 hours, stirring every 20 minutes (it's about to smell SO GOOD, even though it looks like someone "took a dump in the crockpot"). After 3 hours add the water and stir it well. Continue cooking for another 45 minutes, still stirring every 20 minutes. Once they are all cooked, spread them out over a cookie sheet in a single layer and allow to cool, then enjoy the sweet treat!

(This is laughably easy, and REAL cute. Everyone was like "what a great snack where did you get this!" ha.)
Servings: (as many peppers as you want to use- 1 pepper = 8 slices)
Prep Time: 5 minutes
Cook Time: 0

Ingredients:
  • Bell Peppers (red and green if it's a Christmas party..presh)
  • Clean Hummus (Trader Joe's and Whole Foods have lots of options or you can make your own. I haven't ventured there yet.)
Slice each pepper into 8 slices, lengthwise. Scoop hummus onto each slice and serve.

Clean Snacking: Salty & Sweet Edition

So here's the thing about this snack- I have no idea what to call it. It's delicious, it tastes like bar food, it looks kind like mozzarella sticks but Cauliflower Sticks gives the total wrong idea, so what do we call it? After punishing an entire tray of them the BF came up with this list: sticks, crescents, swirls, twirls, nuggets, bits, bites, tots, tits (really?), chews. Um, ew. But, these nameless ditties are so delicious and make a great clean snack or party food. They store well and taste just as good reheated. Here's the breakdown:

Servings: 5 (3 per serving)
Prep Time: 15 minutes
Cook Time: 15 minutes

For the nameless cauliflower snack-
Ingredients:
  • 1/2 large head of cauliflower ($2.50)
  • 1/2 cup shredded mozzarella cheese ($.50)
  • 1/2 cup cornmeal ($.50)
  • 1 egg (
  • 1 egg white
  • 3 teaspoons Italian seasoning
  • 3 Tablespoons dried Basil
  • 1 Tablespoon garlic powder
  • 2 cloves garlic, minced

Preheat oven to 400 degrees. Cut off the cauliflower florets and steam them (easier than it sounds- if you don't have the equipment, just put it in a pot with about an inch of water, boil the water, cover and let it sit on the stove on high for 5-10 mins or until tender). Allow the cauliflower to cool for a few minutes.

Take the steamed cauliflower and wrap it up in paper towels and SQUEEEEZE all that water out. I went through 7 paper towels doing this, gotta get rid of that excess water!

Now take your dried, steamed caulflower and finely dice it. Combine all the ingredients in a bowl and mix well. Pull out a chunk and roll together into an ovalish shape that is about 1 inch by 3 inches and place on a foil lined baking sheet. Do this until you have used up all the 'dough'- should make about 15 cauliflower snack things.

Cook for 10 minutes. Serve with bruschetta and enjoy!


PS anyone who went to high school with me may recognize this phrase from an old chemistry teacher. My brother still gets me laughing till I cry while he walks around the house flinging candy bars around yelling "I'm feelin SNACKY! Anyone else? SO SNACKY! Who got candy bars for me?" Anyway we always say "feelin snacky" instead of "hungry" or "snack time" or whatever.

Yesterday my craving for salty, crispy, delicious chips was SO REAL so I fixed myself some sweet potato chips. Can we just talk about how, why is anyone eating regular potato chips when you can eat sweet potato chips? Just look at the health difference- hmm 10 grams of fat for something that won't fill me up for more than 20 minutes or ZERO grams of fat for something that is also really good for me? {click "read the whole post for recipe and comparisons!}

Ok honestly I've never been a big potato skin person- I just never really got it. But in my experimentation to formulate the best tailgate food that won't upset my tummy AND won't cause me to gain 50 lbs by the BCS Bowl I came up with these cleaned up versions of the real thing. All 4 flavors were a hit but Greek and Pizza tied for first among everyone's favorites.

Lesson learned in cooking potato skins: Don't be shy about scooping out the potato guts! Less potato left on the skin = More crispy! I know, I know, everyone knows this except me because I just now got into potato skins 27 years into the game. Here are my findings: {Click "read the whole post" for recipes}

I finally got tired of breakfast casserole. The idea of waking up and eating one more square of egg/veggie/meatness made me gag a little, so I tried eggs another way: Deviled! I assume they are called "deviled" eggs because just one tiny half egg contains at least 5 grams of fat, meaning if you eat 2 halves (in my book 2 halves = 1) you have consumed almost 20% of the recommended daily fat for a 2,000 calorie diet before 8 a.m. And if I'm at a party, AS IF I would ever just eat 1-2 of these babies. So yeah, that's not for me. I experimented with a few different ways to keep the texture but cut out the fat, and this was my favorite. The cilantro and lime added a nice kick, but my conclusion is that I'm down with hard boiled eggs for breakfast but maybe deviled eggs can stay a party food.

Ok did anyone else go to a college in a town with Gumby's: Home of the POKEY STICKS? Well thanks to late night pokey sticks (and a 24-hour dining hall, and penny drinks, and soft serve ice cream) I gained a solid 20 pounds in college. Thanks to clean eating and exercise I have kept those pounds off, but sometimes I get a craaaavvinnggg for pokey sticks. May I point out that this version is much less fattening/calorie-packed/carbed-out as well as much less expensive?

 So here's my pokey stick substitution:

So if you haven't discovered Ezekiel Bread yet, get on it. It's in the freezer aisle of the grocery store- no preservatives, no flour, made with all natural grains and stuff and I actually think it's better than regular bread. So this is a little Sunday snack I had while I was prepping food for the week. Isn't it pretty?
